A restaurant bin is scheduled around covers, not convenience
The alley behind a restaurant is at its busiest exactly when the dining room is. A truck there at half past twelve blocks deliveries, staff and sometimes the fire route, so hospitality bookings are set to off-peak hours and stay there.
For a kitchen strip-out that means the work happens between closing and prep, often over a weekend. Stainless, line equipment, walk-in panels, ceiling tile and flooring all come out in a compressed window and the bin has to be swapped fast.
Grease is the one thing that never goes in. Used cooking oil and grease-trap waste are a separate licensed stream, and refrigeration units have to be drained and tagged before they can be loaded. The prohibited items list covers both, and demolition debris covers a full gut.

Kitchen Waste
What a kitchen strip-out can and cannot put in the bin
Stainless benches, shelving, dry-store fittings, ceiling tile, flooring, partitions and furniture all go in. So does most line equipment once it is disconnected, and walk-in panels once they are broken down.
Refrigeration is the exception. A walk-in cooler, a fridge or an ice machine holds refrigerant, and that has to be recovered and tagged by someone certified before the unit can be scrapped. Loading one intact means it comes back off the truck.
Used cooking oil, grease-trap waste and food waste are licensed streams and never go in a roll-off. They need a dedicated collector, which is worth arranging before the strip-out week rather than during it. Prohibited items has the rest, and what we take the acceptable list.
